Ingredients Â
2 Cups Heavy CreamÂ
1 Cup Whole MilkÂ
¾ Cup Fine Granulated SugarÂ
5 Egg YolksÂ
1 Teaspoon Vanilla ExtractÂ
Pinch of Slat Â
Instructions: Â
Begin by bringing the heavy cream, milk, half of the sugar, and vanilla to a slight simmer. Do not allow the mixture to boil. Remove from the heat, then whisk together the egg yolks, remaining sugar, and salt in a separate bowl. Â
Temper the egg mixture with the cream mixture. Do this by slowly adding the cream mixture to the egg mixture while constantly stirring to help prevent the eggs from cooking and scrambling. If this does happen, you will need to start again. Â
Once tempered, you will be left with a smooth yet loose sweet custard. Pour the custard back into a small saucepan and heat until thickened, which takes 5 to 10 minutes. Once thickened, strain through a fine mesh strainer into an airtight container and chill for 2 hours or overnight. Â
Lastly, add your custard to the ice cream machine/maker—here is when you can add some yummy flavors!  Â
Pretzel and Peanutbutter Â
